Linda's Tilapia with Mariah’s Chow Chow

Ingredients:
Spinach
1 Tablespoon olive oil
1/8 tsp of garlic powder
1 tsp of diced jalapenos
2 Tablespoon Mariah's Chow Chow Relish: Sweet & Mild
Tilapia
Lemon slice


Directions:

I sauteed spinach with a little bit of olive oil (1T), 1/8 tsp of garlic powder and 1 tsp of diced jalapenos and after the spinach wilted, I threw in 2T of Mariah's Chow Chow Relish.  I heated it through and topped it on baked tilapia (which I baked for 15 min on  400 with only a dab of butter and a squeeze of lemon juice.  It was very very good and a nice, healthy dinner.

Mariah's Chow Chow Relish Hot-Hot-Hot Chicken Wings

Mariah's Chow Chow Relish Hot-Hot-Hot Chicken Wings
Ingredients:
20 Chicken Wings, tips removed
1/2 C Mariah's Hot-Hot-Hot Chow Chow Relish (or to taste)
1/2 C Dry Cooking Sherry
4 T Peanut Oil
1/2 C Soy Sauce
2 t Fresh Ginger
1 t Garlic Powder
1/2 C Light Brown Sugar

Directions:
Preheat oven to 400 degrees.
In a bowl combine all the ingredients except the Chow Chow Relish. Turn to coat.
Place in a shallow baking pan. Pour Chow Chow Relish over the chicken
Reduce oven temperature to 350 degrees.
Turn twice while baking.
Bake uncovered for 1 hour or until juices run clear and glaze is set.

Ingredients:
1 C Mariah's Sweet & Spicy Chow Chow Relish
1 C shredded Asiago cheese
8 Medium Flour Tortillas
1/4t garlic powder (optional)
Sour Cream (for topping)

Directions:
Heat a large griddle (skillet) over medium heat, spray lightly with cooking spray.
Place one tortilla in skillet and cover with a thin layer of relish.
Sprinkle cheese on top and cover with another tortilla.
Heat for 1-2 minutes on each side, browning until cheese is melted.
Remove quesadilla from skillet, place on a platter.
Cover with foil to keep warm while cooking remaining quesadillas.
Cut each quesadilla into 4 wedges. Serve warm, topped with sour cream.
*For a milder taste use Mariah's Sweet & Mild Chow Chow Relish.
*For extra zip use either Mariah's Chow Chow Relish, "Sweet & Hot", or "Hot-Hot-Hot."

Ingredients:
1/2 C Mariah's Sweet & Mild Chow Chow Relish
8 oz. Cream Cheese (softened)
1/4 C Mayonnaise
1t Celery Seeds
1t Garlic Pepper or Garlic
1/2t Paprika (optional)

Directions:
Mix all ingredients together and refrigerate at least one hour.
Serve with you favorite crackers, chips, or vegetable sticks.
*For more texture add an additional 1/2 C of Mariah's Chow Chow Relish.
*For extra zip, use as an additional 1/2 C, one of the following Mariah's Chow Chow Reishes,
"Sweet & Spicy", "Sweet & Hot", or "Hot-Hot-Hot".

Ryan has a special place in the history of Mariah’s -- he was the first person call me with congratulations in December 2008 after the article was published in the New Haven Register. He began with Mariah’s Hot & Spicy until Mariah’s Hot Hot Hot hit the market; it was love at first taste. Here’s a few of his favorite recipes.  Ryan is a creative cook; you may need to adjust to taste.  (2010)

Ingredients
Boneless chicken filets
Sopressata or pepperoni
Provolone cheese
Mozzarella cheese
Old Bay seasoning
White wine
Tomatoes
Eggs
Sesame seeds
Mariah’s Chow Chow Relish, Hot Hot Hot

Directions
Prepare chicken breast; slice open for stuffing.
Stuff with supasada, or pepperoni and provolone cheese and Mariah’s Chow Chow Relish.
Dip in egg wash, then Old Bay seasoning, sauté until cooked.
Toss in some sesame seeds and finish off with white wine just enough to glaze pan.
Serve with long grain rice (and or) a tomato and mozzarella cheese dish with Mariah’s Chow Chow Relish, Hot Hot Hot on the side.

Ingredients:
3 lbs ground beef
3 eggs
 Fresh thyme
 Kosher salt
¾  to 1 cup fresh bread crumbs (or 3 slices of stale bread, crust removed, pulse in processor)
3 – 4 Bacon slices
2 – 3 cups Mariah’s Chow Chow Relish / Hot & Spicy

Directions:
Preheat oven to 350°.
In large mixing bowl, combine beef with 1 ½ cups of chow chow relish, eggs, thyme, season with salt and pepper.
Add the bread crumbs in stages starting with ½ cup (you may not need all of it) for desired texture.
Use a small skillet to fry a test hamburger patty and taste for seasoning. It should hold together and still have a soft consistency.
Fill loaf pan with meat mixture and tap pan on counter to settle.
Flatten top and cover mixture with another ½ cup of chow chow relish.
Lay bacon across the top lengthwise.
Bake on sheet pan and rotate halfway during cooking time.
Bake meatloaf about 1 – 1 ½ hrs till bacon is crisp and meatloaf pulls away from sides of pan.
Let cool before slicing and serve with Mariah’s Chow Chow Relish.

Ingredients:
1 lb Ground Beef/Lean (Turkey Ground Beef)
1 c Mariah’s Sweet & Mild Chow Chow Relish*
1 c Italian Bread Crumbs
¼ cWorchester sauce
Salt & Pepper to taste
Garlic Pepper can be used as a substitute for pepper

Directions:
Preheat Oven to 350°.
Combine ground beef, bread crumbs, Chow Chow Relish, Worchester sauce, seasonings.
Mix gently but thoroughly, shape and place in a loaf pan.
Cover and bake for approximately one hour.
Top with Chow Chow Relish. *Any flavor desired.                                                                                   
Serve with your favorite side dish. ENJOY!
